HAPPY Day 3

Day #3: Making Crazy Cake

As much as love EATING crazy cake, I love MAKING it even more. The recipe for Crazy Cake includes two of the ingredients found in science experiment volcanoes: Baking Soda & Vinegar. It bubbles and fizzes…so much crazy fun! 

 CRAZY CAKE

Oven Temp: 350                                         Baking Time: 30-40 minutes

2 cup sugar

2 ½ cup flour

2 teaspoons baking soda

1 teaspoon salt

¾ cup cocoa

2 teaspoons vanilla

2 tablespoons vinegar

½ cup oil

2 cup water

*Mix together all ingredients. Put in greased and floured 9×13 cake pan

 

FROSTINGS

Ingredients for Peanut Butter Frosting

1 ½ cups powdered sugar

½ cup creamy peanut butter

¼ cup butter, softened

2 to 3 tablespoons light cream or milk

 

Ingredients for Vanilla Frosting

3 cup powdered sugar

½ cup softened margarine

2 teaspoons vanilla

 

Ingredients for Chocolate Frosting

3 cup powdered sugar

½ cup softened margarine

2 teaspoons vanilla

¾ cup cocoa

TIPS

Don’t frost when the cake is hot.

Can add food coloring to the vanilla frosting for fun colors.

Can use this recipe for cupcakes as well—use muffin papers for easy removal!

  1. I’m very tempted to make this right now. Should I hoist my 9-months pregnant belly up out of this chair and waddle to the oven? Nah. I’ll just dream of eating it. Happy Birthday to your boy! My girl will be seven in one month.
